Ingredient: 250 grams pasta
250 grams cleaned raw shrimp
salt and pepper to taste
1 stick unsalted butter
4 minced garlic cloves
½ teaspoon dried oregano
½ teaspoon crushed red pepper flakes
2 cups arugula
¼ cup grated Parmesan
2 tablespoons fresh parsley, chopped
Directions:Add the shrimp, garlic, lemon zest, ½ T of oil, salt and pepper in a small bowl and mix them together, marinate for 15 minutes. Melt 2 tablespoons of butter in a large skillet; add the garlic, oregano, and red pepper flakes. Sit frequently for about 2 minutes. Add shrimp and cook, stir occasionally until the shrimp is pink (2-3 minutes).Melt the remaining butter in the skillet, stir in the pasta, arugula and Parmesan for about 2 minutes. Stir in the shrimp.
Serve the pasta in a bowl, garnished with parsley.
