Can you believe a new school year is already here?! While some may love this time of year, I dread it! Some love the changing seasons, new school clothes, school supplies, new friends, new classes, new experiences. Not me! I dread the long days without them, but I also dread the packing of lunches. That was until I discovered a number of easy-to-make lunches, which are also fun and exciting for the kids. Your kids are going to love you even more when they open up their lunchbox and find a tasty surprise, not another sandwich. Below are a few lunch ideas which can be made ahead of time or prepped the night before so assembly in the morning is easy.
Pizza buns are easy to make and absolutely delicious. You can even buy read-made dough from the baker’s. Prepare your pizza ingredients. Take one portion of the dough and roll out on a lightly greased or floured surface. Roll dough into a long skinny rectangle as you would for cinnamon rolls. Then layer meat, cheese and any other pizza toppings you’d like. Roll up the dough and then pinch the edges to seal. Now using a small length of dental floss, slice off equal sized rolls. Place rolls in a greased baking dish. Cover and allow buns to rise 30 minutes. Bake in the oven at 350 for 25 – 30 minutes or until golden brown. The added bonus is that you can freeze these and grab them on the go whenever you are in a rush.
Add a few other healthy things to their lunch along with a little treat then put the containers inside their insulated lunch bags and that’s it! There are plenty of other similar ideas, just be creative and packing lunches will no longer seem like a tiresome, boring chore.
