Gazpacho Recipe


6 whole Roma tomatoes

1 cup chopped cucumber

1 cup chopped orange bell pepper

1/4 cup minced red onion

1 tablespoon minced jalapeno

1 minced garlic clove

1 whole lime (juice and zest)

1/4 cup apple cider vinegar

1 tablespoon Worcestershire sauce

4 Cups of tomato juice

1 teaspoon of salt

1 teaspoon of black pepper



Toss together the cucumber, bell pepper, tomato, onion, jalapeno, cilantro, and garlic in a large bowl.

Next, add the apple cider vinegar, lime juice and zest, Worcestershire sauce, and tomato juice to the bowl.

Stir the ingredients to combine.

Season the mixture with salt and pepper.

Cover to and chill for around 30 minutes.

The refreshing soup can be served chilled or at room temperature.
