Goat Cheese Apple Salad

 

Ingredients:For the vinaigrette:

3 tablespoons extra-virgin olive oil

1 1/2 tablespoons fresh lemon juice

1/2 teaspoon salt

1/4 teaspoon orange zest

1/8 teaspoon grand allspice

For the salad:

3 Granny Smith apples, sliced

Around 300 grams of greens (kale, arugula or mixed lettuce)

1/2 red onion, sliced

1/4 teaspoon salt

1/4 teaspoon black pepper

2 cups of crumbled goat cheese

2 tablespoons of balsamic vinegar

Directions:

Start off by making the vinaigrette. All you have to do is while together the olive oil, lemon juice, salt, orange zest, and the allspice until they are all combined.

Next, toss the sliced apples, red onions, and greens in a large serving bowl. Sprinkle them with salt and pepper. Then drizzle the salad with vinaigrette, and then gently toss. Top the salad with the crumbled goat cheese (optional: add walnuts or pecans).
