4 tomatoes, sliced (you can also use cherry tomatoes if you’d like)
1/3 cup of Extra-virgin Olive Oil
2 tablespoons of balsamic vinegar
1 tablespoon of honey
2 tablespoons of finely chopped red onion
1 large clove of garlic
1 tablespoon of minced fresh parsley
1 tablespoon minced fresh basil & leaves for garnish
450 grams of fresh mozzarella (diced)
Salt and Pepper to taste
Arrange the sliced tomatoes in a large shallow dish.
Combine the oil, balsamic vinegar, onion, garlic, parsley, basil, salt and pepper in a glass jar. Close the lid and shake it up. Then pour the sauce over the tomatoes in the dish.
Cover the plate with a cloth and place in the refrigerator for up to two hours to allow it to marinate.
Remove the plate from the refrigerator and allow the tomatoes to go back to room temperate.
Place the sliced mozzarella in the plate and garnish with fresh basil before serving!
