Rice Pudding with Roasted Strawberries


2 tablespoons butter
1/2 cup rice
1 and 1/2 cups milk
1/2 cup cream
1/4 cup sugar
1/2 teaspoon vanilla extract
a generous sprinkle of cinnamon.


In a small pot melt the butter over medium heat. Stir in the dry rice and cook until it appears translucent. Stir in the sugar and cinnamon. In a separate pot combine the milk and cream and simmer over low/medium heat. Pour about 1/3 cup of the warm milk into the rice mixture. Cook and stir until it has nearly all absorbed into the rice. Repeat until you have used all the milk. This will take 20-30 minutes, just keep adding milk and stirring. It’ll come together. In the mean time, roast some strawberries. Once you’ve added all the milk stir in the vanilla extract and serve warm with fresh or roasted fruit.
